Are you on Team Potato?

Although Mr. Potato Head wasn’t my toy of choice as a child, I loved potatoes.

As a kid, I wasn’t a huge fan of Mr. Potato Head. But the evolution of Mr. Potato Head is quite fascinating! Initially introduced in the early 1950s, it indeed started as a collection of quirky facial features that children could pin onto actual potatoes or vegetables.  Although Mr. Potato Head wasn’t my toy of choice as a child, I loved potatoes. Even when I was a meat eater, there was nothing like a good baked potato. And of course, I would be remiss if I didn’t mention potato chips and french fries.  Simply put, potatoes are the best.

Now that, I subscribe strongly to a plant based diet, potatoes are even more important for many reasons and I was reminded of that when I read the story Potatoes Are the Perfect Vegetable—but You’re Eating Them Wrong .  It is a long read, but well worth the time, especially if you love potatoes.  So if you currently not on TEAM POTATO, I encourage you to join me and the many others who extol the power of potatoes. 

This Saturday is the Vegetarian Society of Tulsa (VSoT) potluck, and I don’t know if potatoes will make an appearance, but I can say with certainty there will be plenty plant based foods that are good and good for you just like potatoes.
